Almond Crusted Wild Salmon

Cook time: 15 minutes


2 fillets (100-170g) atlantic salmon, wild fillets

1/4 cup whole almonds, raw

2 tbsp parsley, fresh

1 tsp himalayan sea salt (or to taste)

1 clove(s) garlic (finely minced)

1 tbsp honey, raw

2 medium brazil nuts (optional (just 2 nuts))

2 lemon wedges (for serving)


  1. Preheat oven to 425 F
  2. Use a knife to chop up almonds and Brazil nuts and garlic into small pieces or use a food processor. Transfer to a bowl.
  3. Add parsley and sea salt to the bowl and mix well.
  4. With the salmon skin side down, dry off the top of salmon and brush the honey over fish.
  5. Dip the honey side of the salmon in almond/parsley mixture
  6. Add to a parchment paper lined baking sheet
  7. Bake for 15 -20 minutes or until it flakes with a fork.
  8. Remove from heat and serve with lemon wedges
