Roasted Asparagus

Serves 2


  • 12-14 stalks of asparagus
  • 1-2 tbsp of extra virgin olive oil (cold pressed)
  • 1 wedge of lemon
  • Pinch of sea salt
  • 1 tbsp of freshly grated parmesan cheese (optional)


  1. Heat oven to 400 degrees
  2. Snap fibrous ends from asparagus, discard the ends and add the tops to a baking sheet
  3. Pour olive oil over asparagus to coat evenly
  4. Roast asparagus for 8-12 minutes depending on the thickness of the asparagus (texture should be slightly crunchy and not shrivelled)
  5. Remove from the oven and squeeze a wedge of lemon over the asparagus
  6. Sprinkle sea salt over asparagus
  7. And if using parmesan, sprinkle over asparagus and mix well until coated and serve immediately.

You can also add minced garlic if you have time.
